What I'm loving Wednesday!

Today I found out that Shane gets a FOUR DAY WEEKEND!!!!
Now with the Navy, this is hardly ever happens...to us at least!
So we are definately taking advantage of this and having a mini honeymoon! :)
And we are going to........
I cannot wait!
I have never been! And we are soo excited!!!

Shane and I LOVE LOVE LOVE this hot sauce!
The recipe for the Asian glazed drummies called for this and we have had it on everything since we got it! (yes, even breakfast!)

Clinique Lash Power Mascara!!
I love this mascara because I have always had issues with my eyes watering or being dry due to my contacts and this stuff doesn't budge when I have those problems! So cry away and this mascara isn't going anywhere! The only way to take it off is with a slightly wet warm cloth, makeup remover doesn't get it off.

Aspirations....

Go to a baseball game with the family and BAM, catch a fly ball with baby in arms!!
(The poor womans husband was telling his wife on the way to the game that he has never caught a foul ball in all his 30 years. And her response, "Well today just might be your day!")

Call. Me. Betty. Crocker.

....Well not really, but I am trying!
Last night, I really felt the urge to cook!! and boy did I do some cooking!
On the menu:
Asian Glazed Drumsticks...OH MY GOODNESS, you have to try this!! It's AWESOME!!
Mine did not glaze like the picture, but it was absolutely Delicious!

Steamed Broccoli and Carrots

Boiled Cabbage
I just used Water, 2 bouillon cubes, a little bacon grease and salt & pepper.
Very easy!!

Then for DESSERT!!! If you don't try the Asian Glazed Drumsticks, you have to try this!!
Deep Dish Chocolate Chunk Pecan Cookies with Vanilla Ice Cream!!
Yes, It's a mouthful and believe me you will not be disappointed!

This recipe makes about 3 logs of cookie dough, so you can freeze the extra and have cookies anytime you want!!

Chocolate Chunk Pecan Cookies Recipe

Based off of Bo Friberg’s Professional Pastry Chef cookbook’s Chocolate Chip Cookies recipe.
Ingredients
3/4 c  Light Brown Sugar
 3/4 c + 1 T  Granulated Sugar
1 c unsalted Butter
2 large Eggs
1 t Vanilla Extract
1 t Sea Salt
3 c all-purpose, unbleached Flour
1 t Baking Soda
 .75 lb Dark Chocolate (cut into 1/2″ chunks or smaller)
1 c chopped Pecans (optional)


Preheat oven to 375° F (350° for convection ovens)
1. Beat together the butter, brown sugar and granulated sugar until light and fluffy. Add eggs, vanilla extract, and sea salt.
2. Sift together the flour and baking soda. Stir into batter, then add chocolate chunks and stir until well mixed.
3. Roll into 1 1/2″ thick logs. If not using soon, freeze the logs for future use, otherwise cut the cookies into equal portions, about 3/4″ thick.
4. Pat the discs even and circular then place on a silpat or baking paper lined sheet pan. Space the cookies so they won’t bake into each other when they spread.


Now for the Deep Dish Cookies...

Deep Dish Cookies – Chocolate Chunk Pecan w/ Vanilla Ice Cream

dough from Chocolate Chunk Pecan Cookies



4″ ramekins (or other small baking dish)

 Vanilla Ice Cream

 Preheat oven to 375° F (350° for convection ovens)

1. Fill ramekins 1/2″ deep with raw cookie dough. Place ramekins on sheet pan and put in middle rack of oven. Bake 12-18 min., or until top starts to turn golden brown. (remember you want them slightly undercooked, but not too doughy.)
2. Remove from oven and place each ramekin on a napkin (this allows you to hold the hot dish as you eat your dessert delight.) Top with a couple scoops of ice cream. Grab a spoon and enjoy.
As easy as baking cookies!

Perfect.Weekend!

This weekend I had Shane all to myself and I loved every second of it!
As you know last weekend we got married and had an absolutely perfect wedding, but we barely got to hangout!
So this weekend def. made up for it!
Friday night we did a little shopping and just took it easy.
Saturday morning we were determined to sleep in! Well, we tried. 7am is a little later than what we are used to.
Once I woke up Shane kept asking me what I wanted for breakfast, then I was told to stay in bed and he would take care of everything! Woohoo!! This has never happened! I'm usually the one up and making breakfast! So about an hour later, the sweet husband brought me a plate...
Omelet, toast, turkey bacon, grapes and leftover jambalaya! haha!! It was delicious!! And he didn't make a mess which was the best part!!

Then we decided to slowly get ready and find something to do for the day. While I was getting ready, Shane found online, a chili cookoff in Ocean Beach, CA.

Not only was it a cookoff but it was also the Ocean Beach fair! Even after the huge breakfast, I was ready for some fair food!!!
I was not disappointed whatsoever!
They had the cutest and weirdest things! Along with some odd people!
If you love to people watch, come to California! There sure are some CRAZY people out here!

After splitting a BBQ sandwich, we needed something sweet so we checked out everything on the food row and found BEIGNETS!!! We love BEIGNETS! Then we saw they had deep friend oreos, which I had never tried before so of course we had to test them out!!

Yes, out of focus, but it is seriously HEAVEN in your mouth!! I will have to stay FAR, FAR, away from these, if I want to stay somewhat thin!
Chili cookoff...just seems weird on the beach...but it was lots of fun!

Shane and I have become very interested in (O.N.E.) coconut milk/water and drinking it instead of sports drinks,(less calories, lots of vitamins, high in iron) so when we saw the coconut, we just HAD to try that too! haha! It was pretty good!
(my nails still looking pretty good after 1 1/2 weeks)

We did buy something other than food! I did get this precious purse! I just love it!!
I am so weird, I hate birds and am slightly afraid of them, but I love them on fabric!!
I love these trees too! Good climbing trees!!

After the fair we drove up to La Jolla to see if we could see where they are filming, MTV's Real World San Diego. But were disappointed....didn't see a thing.

We decided to eat, AGAIN, and found a not so cool restaurant called the Bourbon Street Bar & Grill...
Once we sat down at our table, Shane kept looking around and making an odd face then told me to check things out and yea...we ended up in the predominatly gay pride part of town!! It was hilarious!! The food and beer was tasty...and it was definately a different experience, and I loved it! You are supposed to get out of your comfort zone and experience something new every now and then!

Sunday, Shane took me to a 50s diner, like the one off of Pulp Fiction, then we went to the movies and saw Bridesmaids. Yep, this weekend was all about me... I am already spoiled and am told daily that I better not get used to it! haha!

fill.in.the.____.friday.


1. The last thing I ate was: Shane picked up lunch for us at the ship yard off of a food truck...a true California burrito. This has everything in it!! Meat, rice, FRIES, guacamole, salsa, peppers...Delicious!! We split it and I'm still hungry! lol

2. The next thing I'd like to eat is: Something off the grill! I love it when Shane grills out! :)

3. The best things: in life are FREE!! San Diego county is having their fair until July 4th! and Shane and I just scored some FREE tickets to it!! Hopefully we will get to go this weekend!!

4. Something that makes me supremely and utterly happy is: that I get Shane all to myself this weekend!! So happy that he doesn't have to work!! YAY!! (Another thing that makes me happy is Fair food!! Cannot wait!!!)


5. Sports are: Fun! To watch and play!! I love going to any baseball game!!! (love me some Albert Pujols)

6. I miss: my family and friends in the South!! Boo hoo!!

7. Right now I am: trying to figure out what Shane and I will do this evening! Fair or grill out?? Or both??...

Our wedding weekend!! :) Part 4

I wish that everyone could have been at the wedding to take pictures in the Photobooth! Here are somemore pics from the booth.

Our wedding was absolutely PERFECT and I hate that it's already over!
Back to the real world! We won't be going on a honeymoon right after the wedding but we will take a few trips this year before Shane leaves on another deployment. I really can't complain, we do live 15 minutes from the 2nd most beautiful beach in the US. So, we will just say the next few years will be our honeymoon!
As for babies, we will wait a few years, then expand our family!! :)
Now, I must get back to my duties as a wife...haha!




Our wedding weekend!! :) Part 3

One thing that I was soooo excited about was the Photobooth we had during the reception! It was such a great idea! I think everyone had a blast going in and taking pictures! Anyways, while Shane and I were taking pictures, my bridesmaids snuck into the booth and snapped some pictures! They are so precious!

Anyways, we then took the group pictures.

I can't tell you enough how great they looked that day!!! These are my absolute best friends and I love them soo much! I sound like a broken record, but it's true! I don't know what I'd do without them!

After a few hundred pictures we went back to the cabins to touch up our makeup and wait until 6pm.

 I was so nervous all day! I hate attention and well, "Tough luck, mac!!" It's your wedding day! lol.
As we were waiting, Libby's boyfriend called to see if we needed anything and by this time in the day, we were starving!! Sweet Dustin, stopped by Sonic and ordered 9 JR burgers and rushed them to us. By the time he got there, we were supposed to be at the chapel! So we scarfed down the burgers and went to the chapel to get hitched!

The guys all calm waiting to head to the chapel. I love how it has Shanes gift from me in it. We exchanged gifts before hand, I got him a necklace with a sterling silver cross and he got me a gold necklace from dogeared.com, the infinite love necklace and I love it!
The ceremony went by without a hitch, Kyleigh my niece walked down the isle!! It was Great, except for the fact that we were about 10 minutes late and Shane thought that I was making a run for it. But no, it was the burgers fault! haha! Right before my dad and I walked down the isle, I took a deep breath and we heard a "POP" and the clasps on my dress busted! So I was not able to take a deep breath again until I took the dress off!!
Then my dad began to clap too early during the ceremony and as I'm turned around giving him the evil eye I turn back around and Shane is getting his lips ready for the kiss by putting on his chap stick! It was HILARIOUS and I'll never forget this special day! Thank you everyone that came and helped out! I love each of you soo much! :)
